Here’s an easy weeknight meal for ya!
I buy those 4-packs of pork sirloin roasts at Costco and usually cut them up into pieces to make Greek Souvlaki (will post that recipe at a later time). But for a weeknight meal, I thought it’d be easier and quicker if I roasted it whole. I was always hesitant in doing that because I was convinced it would turn out dry.
Quite the opposite! In fact, in all of the times I’ve made it – even the time when I didn’t have time to wait for it to completely thaw and threw it in the oven still a tiny bit frozen (of course, took waaay longer to cook through) – it has never, ever been dry. And it’s really tasty.
First, measure out your spices and whisk in some olive oil.
Then rub the mixture all over your pork roast and place it on a rack on top of a baking sheet.
Roast in a 350F oven for about an hour (until internal temperature reaches at least 145F), let it rest for 10 minutes – and dinner’s done. It does not get any easier than that!
Preheat oven to 350 degrees Measure out all of the spices in a bowl and whisk together with the olive oil. Rub the mixture all over the pork roast and place on rack on top of a greased baking sheet. Roast for about 1 hour or until the internal temperature reaches at least 145F*. Let rest for 10 minutes and serve. I remove my roast from the oven when the internal temperature reaches 150F. After it rests, it climbs up towards 160F. That's our preference, you can adjust to yours.herby rubbed pork sirloin roast
