The only time my hubby makes special requests for food that he’d like me to make is on game days. His alma mater played in the Cotton Bowl this past Monday and he asked me to whip up a batch of spinach dip.
Spinach dip.
Remember when it was all the rage in the 80’s? Spinach dip was at every gathering. I finally asked for the recipe from one of my high school friends and people have been asking me to make it ever since. Such a retro recipe – and super easy.
Note: Right before you add the spinach, your ingredients should look like this:

In a bowl, mix together the first 5 ingredients. (I like to use my mini-chopper to cut up the red onion and water chestnuts) Add the thawed and completely drained spinach to the bowl and mix thoroughly. (Make sure you squeeze out as much of the liquid as possible) Let sit in the fridge overnight or for several hours at least. So, so important! Serve with cubes of french bread, crackers, or chips.spinach dip
